Bacon Wrapped Venison Bites

Ingredients

  • 1-2 lbs venison

  • Buttermilk

  • Apple Cider Vinegar

  • Can of Beer (Optional)

  • Jalapeño peppers

  • Cream Cheese

  • 1 pack of Bacon

  • Montreal Steak Seasoning

  • Salt & Pepper

  • Toothpicks

Prep

  1. Dice venison into 1-inch pieces and trim all white/silver portions of meat as necessary

  2. Place venison into large bowl, and cover completely with buttermilk

  3. Add 1/2 cup of apple cider vinegar

  4. OPTIONAL: Add 1/2 of a can of beer of choice — we use Miller High Life

    1. Side note, be sure to drink the other half to celebrate!

  5. Add 1 TBSP salt and 1 TBSP Pepper

  6. Mix together to ensure seasoning is well distributed throughout mixture

  7. Let venison soak in buttermilk in refrigerator 4-5 hours prior to cooking

  8. Place toothpicks into cup or bowl of water, and leave to soak while venison is left in buttermilk mixture

    1. Side Note: This helps prevent toothpicks from burning or catching fire on grill

  9. When ready to cook, pour venison cubes into strainer to drain excess buttermilk from meat slices

  10. Season generously with salt, pepper, and Montreal Steak Seasoning

  11. Remove seeds from jalapeños and cut into bite size pieces

  12. Open pack of bacon, and half all slices to be used to wrap around venison bites

Cooking Instructions

  1. Pre-heat grill to medium-high heat (375° - 400°)

  2. Use single slice of the cut jalapeños, and spread cream cheese onto one side (optional)

  3. Place slice of jalapeño with cream cheese onto one piece of the cut venison

  4. Wrap with bacon, and finish off with a toothpick to hold everything in place

  5. Continue this process until all venison bites have been wrapped

  6. Place all wrapped venison bites on grill

  7. After a few minutes, flip venison to other side to retain char without burning

    1. Side Note: Bacon grease will cause periodic flames on grill, so be sure to flip often to avoid burning

  8. Cook until bacon gets crispy, and place finished bites onto plate

  9. Finish off with a pinch of salt and pepper as soon as you remove pieces from grill

  10. Last Step - Enjoy
